HAPPY HALLOWEEN with ITALIAN RECIPE!

PUMPINK ITALIAN RISOTTO:



INGREDIENTS for 2:
 - vegetable broth 1/2 l
-  rice  200 gr
- pumpkin 150 gr
- butter 25 gr
- scalliot 1 (or 1/2 onion)
- grated parmisan cheese 100 gr
- a bit of parsley

PREPARATION:
The pumpink risotto, is a traditional north Italy recipe, very easy to make, simple and delicious!
The first step is to make a vegetable broth, with water and one vegetable stock cube.
Wash the pumpkin, and remove the seeds, cut it in a small cubes. Now, finely chopped the scallon, then pass it in a pan, with a melted butter. When the scallon will be cooked, add the pumpin's cubes.
Let cook for a few minuts, and add the rice, and let tost it for a few minuts as well.
Now add the broth, little at a time, keep it up until will be cooked, al dente!
Now, turn off the heat, add the butter and the parmesan, and mix well, until the rice will be creamy.
Final touch: a bit of chopped fresh parsley... and it done! I hope do you like this simple and ''orange'' recipe for halloween day!
SUGGESTION: I live in Dubai, so I use Uncle Ben's rice, ( made in Usa) perfect for italian and not only rice recipes.
